Winemaking record:
Hand-picked grapes in small 18 kg boxes, one night in the cool store (8°C) and than destemmed. Five days cold soak in our red fermentor, followed by spontaneous wild yeast fermentation. After fermentation, the grape-skins were slowly pressed in a stainless steel basket press (JLB 5). Nature malolactic fermentation in selected barrels. Barrel ageing without one racking, for 10 months; no fining and no filtering. Maturation prior to release 10 months on his nature fine lees – 40% new barrels. Bottling the 6th of January 2016.

Winemakers comments:
A quiet child at the beginning but for the 2nd time, 100% Elgin. Made in extremely good years only (5 x 300 l).
The wine shows a healthy dark-ruby/purple colour and the bouquet offers at first, intense terroir flavours of graphite, violet and dark forest fruit. Later you get more of the red/black raspberry and even some red chilli-pepper. It is again an elegant style of Pinotage. In addition: it’s a medium bodied wine with a nice dense, pure and wonderful acidity. A nice satin-texture, finishes this wine and can be drunken over the next 10 years.
