Vinbeskrivelse

David Aristargos 2018:

Grapes going into the David Aristargos come from twelve different Swartland vineyards. The age of the Chenin blanc vineyard vary from 33 to 49 years and the Sémillon is nearly 60 years old. It is mostly bush vines and dry land farmed. The blend consists of 53% Chenin Blanc, 13% Clairette Blanche, 13% Semillon, 10% Roussanne, 9% Viognier and 2% Marsanne

The grapes are whole bunch pressed and cold settling is allowed for the juice before racking into barrel for spontaneous fermentation (including malolactic fermentation). The wines age from vintage to vintage in old 300 L French barrels.
No enzymes, acid, yeasts, nutrients are used and we focus on minimal intervention (use only sulphur).

Total production: 12 030 bottles.

Six varieties, 14 vineyards and 20 pickings. An exotic nose showing top notes of flowers and dried grass before peach, apricot, melon and pineapple. The palate has lovely fruit expression, zippy acidity and a savoury finish. Intricate and balanced, this moves really well – great entry and side-palate before a long finish. – Christian Eedes, Winemag.co.za, 96/100
